Citrus Salsa

CookingAddic I really enjoy how bright and fresh this salsa is! It's great with tortilla chips for dipping and it brightens up anything that you serve it with or on! It's like pure summer in a bowl!


Citrus Salsa

The easiest way to prepare the citrus fruit is to supreme it and you do this by cutting the top and bottom from the fruit, setting it on the table, running a knife down the sides to remove the skin and then running a knife down the sides of the membrane that separates the sections to remove the slices of fruit.



Ingredients

  1. 2 large oranges, supremed and cut into bite sized pieces
  2. 2 large grapefruits, supremed and cut into bite sized pieces
  3. 2 tablespoons lime juice (~1 lime)
  4. 1 jalapeno pepper, finely diced
  5. 1/4 cup red onion, finely diced
  6. 2 tablespoons cilantro, chopped
  7. salt to taste
Directions

  1. Mix everything, season with salt to taste and enjoy!

Note: To supreme a citrus fruit: Cut the top and bottom off the fruit, set it on the table and run a large knife down the sides to remove the skin before running a small knife down the sides of the membranes to remove the fruit in wedges without the membrane.

Ice Cream Bread


Ice Cream Bread

Here’s what you will need:
For bread:
* 1 pint (2 cups) melted ice cream (you can use any ice cream, but low-fat & dairy-free ice cream do not work well) 
* 1¼ cup self-rising flour
Optional:
* ¼ cup rainbow sprinkles
* ¼ cup chocolate chips

Directions:

1. Preheat your oven to 350˚F/ 175˚C. 
2. Combine melted ice cream and self rising flour. Mix until well combined.
3. Add any additional sprinkles, chocolate chips, or goodies to the batter.
4. Line a loaf pan with parchment paper and grease with a nonstick spray.
5. Pour batter into a loaf pan (like the one seen in the video) and spread evenly.
6. Bake for 35-40 minutes. (Baking times and temperatures may vary from oven to oven.)
7. Allow to cool fully before cutting.
8. Enjoy the easiest bread ever!

Tortellini Chili

This chili is perfect for a quick work night meal and a great way to enjoy some tortellini! 

Tortellini Chili

CookingAddic A quick and easy, 30 minute, one pot chili with cheese tortellini that is just perfect comfort food!


Feel free to serve the chili tortellini topped with your favourite toppings like sour cream or greek yogurt and cheese. 

Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 1+ tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 pound ground beef or turkey
  • 6 cups beef broth or chicken broth
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (28 ounce) can diced tomatoes
  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon oregano
  • 8 ounces fresh cheese tortellini (gluten free for gluten free)
  • salt, pepper and cayenne to taste

Directions

  1. Heat the oil in a pan over medium-high heat, add the onions and saute until tender, about 3-5 minutes.
  2. Add the garlic, chili powder, paprika and cumin and cook until fragrant, about a minute.
  3. Add the beef and brown, about 6-8 minutes, before draining any grease.
  4. Add the broth, beans, diced tomatoes, tomato paste, oregano and tortellini and bring to a boil, reduce the heat and simmer until the tortellini is tender, about 10 minutes.

Tortellini Chili

Slow Cooker: Implement steps 1-3, place everything but the tortellini in the slow cooker and cook on low for 6-10 hours or on high for 2-4 hours before adding the tortellini and cooking on high until tender, about 10-15 minutes.

Option: Start by cooking 4 strips of bacon, cut into 1 inch pieces, and use the bacon grease to saute the onions instead of the oil.
Option: Replace some of the broth with beer or coffee.
Option:  This chili benefits from simmering for longer so if you have the time, hold off on placing adding the tortellini and simmer for up to 2-3 hours before adding the tortellini and cooking until tender, about 10 minutes.

Pesto Caprese Omelette

Pesto Caprese Omelette

The trick to these omelettes is to place the mozzarella into the eggs while they cook so that it melts and then place the tomatoes and pesto in later so that they both remain as fresh as possible! I have to say that the pesto caprese omelettes are both a great way to start the day and to enjoy some of summers produce! 


Ingredients
  1. 1 ripe tomato, diced
  2. 1 teaspoon balsamic vinegar
  3. salt and pepper to taste
  4. 2 eggs, lightly beaten
  5. 1 tablespoon milk
  6. 1 tablespoon pesto
  7. salt and pepper to taste
  8. 1/4 cup fresh mozzarella, torn
  9. 1 tablespoon pesto
Directions

  1. Toss the tomato in the balsamic vinegar and season with salt and pepper.
  2. Mix the milk and pesto into the eggs and season with salt and pepper.
  3. Heat a pan over medium heat, pour the egg mixture into the pan and swirl it to coat.
  4. Sprinkle the mozzarella onto half on the omelette and let cook until the eggs have just about set.
  5. Sprinkle the tomato and pesto onto half on the omelette fold the omelette over and enjoy!
Basil Pesto


BASIL PESTO


Ingredients
  • 1 cup basil, packed
  • 1 clove garlic
  • 2 tablespoons pine nuts, toasted
  • 1/4 cup parmigiano-reggiano, grated
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt and pepper to taste
Directions

  1. Place everything into a food processor and blend.

Greek Style Salad

A Greek style salad with tomatoes, cucumber, onion, olives, feta and Greek dressing.

CookingAddic With spring here I have been thinking about salads more often and one of my favourites is a Greek style salad! A Greek salad is nice and simple containing tomatoes, cucumbers, kalamata olives, feta, onions, and a vibrant dressing. I really like the way the juiciness of the tomatoes and cucumers balance the saltiness of the olives and feta and the red onions provide a sweet and spicy counterpoint. The dressing for this salad is also pretty easy containing olive oil, lemon juice and oregano and the lemony vinaigrette really brightens the salad up. 


This simple Greek style dressing is so fresh, simple and tasty! 



Greek Salad


Ingredients
  • 6 cups lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, sliced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta, crumbled
  • 1/4 cup Greek salad dressing (see below)
Directions
  1. Mix the salad and toss with the dressing.

Greek Salad
Tip: Soak the red onions in vinegar for a few minutes to mellow them out.
Note: Traditional Greek salads do not include lettuce and the base is the tomato and the cucumber.

Ingredients
  • 1/2 cup olive oil
  • 1/2 cup lemon juice (~2 lemons)
  • 1 teaspoon oregano
  • salt and pepper to taste
Directions
  1. Mix everything vigorously until combined.

Option: Replace some or all of the lemon juice with red wine vinegar.
Option: Add some feta brine and cut back on the salt.

Greek Salad


COUNTRY SAUSAGE GRAVY

CookingAddic This easy to make sausage gravy recipe is perfect for your next homemade breakfast of biscuits and gravy.

 

INGREDIENTS
  • 1 12oz package of maple flavored breakfast sausage
  • 3 cups of whole milk
  • 3 tablespoons butter
  • ¼ cup flour
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt

INSTRUCTIONS
  1. Cook sausage in a large skillet. Remove and set aside, leaving any drippings in skillet.
  2. Using medium heat, melt butter in the skillet with the drippings. Once melted, add flour and mix until nice and smooth.
  3. Slowly mix in milk and keep stirring or whisking until all is a nice and even consistency.
  4. Take the sausage and crumble into pieces and stir into to mixture. Also add pepper and salt. Mix well.
  5. Reduce heat to low and let simmer for about 15 minutes, stirring occasionally. If gravy gets too thick, stir in a little more milk.
  6. Serve over warm biscuits

Ingredients
  • 1 (15-ounce) can petite diced tomatoes
  • 1 (15-ounce) can crushed tomatoes
  • 1 cup onions, small diced
  • 1 large apple, peeled, cored and small diced
  • 2-3 jalapenos, small diced
  • 1/2 cup red pepper, small diced
  • 2 garlic cloves, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 tsp. salt
  • 1/2 cup cilantro, roughly chopped
Instructions
  1. In a medium saucepan, combine all the ingredients except for the cilantro over medium heat. Bring to a simmer and cook, stirring occasionally, about 8 minutes. Stir in the cilantro and cook for an additional 2 minutes. Remove from the heat.
  2. Chill in the refrigerator before serving with your favorite tortilla chips.
  3. Salsa can be stored in an airtight container in the refrigerator for 2-3 days.
Notes
1. I’m guessing you could can the salsa after step 1, but I haven’t done it myself. If you try it, let me know how it turns out.

Indian Chicken Curry

Easy, Spicy Delicious Authentic Indian Chicken Curry Recipe.

Indian Chicken Curry

Ingredients:
  •  1 kg Chicken boneless or with bones
  •  1 big chopped Onion
  •  2 tbsp of Ginger Garlic Paste
  •  2tbsp of Red chilli powder
  •  1tsp Coriander powder
  •  1/2 tsp of Garam masala
  •  1tsp Turmeric powder
  •  1/4 cup Dry  or Fresh grated Coconut
  •  Juice of 1 lime
  •  1tbsp Poppy Seeds
  •  50ml Oil
  •  Salt to taste
  •  1 inch Cinnamon Stick
  •  4 Cardamoms
  •  2 Cloves
  •  1 bunch freshly chopped Coriander leaves
  •  1/2  bunch Fresh Mint leaves
  •  1/2 bunch Fresh  Fenugreek/Methi leaves
  •  1 Cup Water

Instructions:
  • 1. Mix Chicken, Ginger Garlic paste(1tbsp), Red chilli powder, Coriander powder, Garam masala, turmeric powder, Salt, Lime Juice and marinate for an hour in deep freezer.
  • 2. For Gravy: Grind Onions, grated coconut,  poppy seeds and ginger garlic paste(1tbsp) to a fine paste and keep aside.
  • 3. Heat oil in a pan. Add Cardamom, cloves, Cinnamon, and fry for a minute.
  • 4. Add the above grinded paste and fry in low flame till it turns golden color.
  • 5. Add Coriander leaves, Mint Leaves and Fenugreek/Methi leaves. Fry for 2minutes.
  • 6. Now add the marinated chicken and fry 10 minutes in high flame stirring in between.
  • 7. Add 1 cup of water and allow it boil for 30 to 40minutes in low flame. You can add more water if you want to have more gravy. That’s your choice.
  • 8. Cook until the gravy thickens and Chicken is tender.
  • 9. Garnish it with coriander leaves and serve hot with rice.
