Fried Tortilla with Parmesan Mashed Potatoes


CokingAddic These are perfect meatless hand pies for kids or adults. It's an easier and less time consuming version to Pirojki. What could be better? Mashed potatoes are mixed with herbs and cheese - is a really delicious combination. Then it's fried in tortilla. Crispy and scrumptious! 

Ingredients:


  • 12 uncooked flour tortillas
  • 2 cups of Mashed Potato
  • 1 tbs minced dill
  • 2 tbs minced green onion
  • 1 med caramelized onion
  • 3/4 to 1 cup of Parmesan or cheddar cheese
  • Salt if needed
  • Black pepper to taste


Make Mashed Potato first than let it cool.

Peel 1 med onion and shop in small pieces. Saute onion until golden color (caramelized).
Mix mashed potatoes with herbs. If potatoes are too stiff add more milk to make em more soft and creamy.





Add cheese of your choice.

 Brush the ends of the tortilla with water.
 Add about 2 tbs of potato filling and spread.
 Pinch the ends with the fork.
Fry on med temp until golden color. 
Fry both sides. Use a paper towel to get rid of excess oil.

Simple Vegetables Recipe


Cooking Addic A colorful medley of four different vegetables is sautéed until crisp-tender, then seasoned with Sweet ginger garlic seasoning and Greek seasoning. Perfect side dish in the summer heat. Great on the grill too wrapped in foil on low heat! 



Ingredients:

  • 1 cup sliced carrots
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 red bell pepper
  • Greek seasoning and Sweet ginger garlic seasoning 
  • Oil to saute 
  • Cooked chicken (optional) 


These seasonings could be used together or just  Greek seasoning is perfect with vegetables.
I added cooked chicken thighs meat.  It's sauteed with garlic and yoshida sauce.
Cut all the vegetables in small pieces. You can use any of your favorite vegetables for this recipe. 
Add oil to the skillet, heat it up. Saute carrots first for a few min.
 Add cauliflower. 
Add broccoli and saute for a few more min. 
 Then add bell pepper and Greek seasoning. Saute until desired softness or crispiness. Sprinkle with Sweet ginger garlic seasoning on top. Serve with rice, pasta or any of your favorite dishes.

French Green Beans Recipe



CookingAddic This is a flavorful, simple way to dress up plain green beans for an easy side dish. Tender, flexible green beans  or French beans are a delight of any meal. Beans are a good source of dietary fiber, vitamins, and minerals.



Ingredients: 

  • 12 oz package of French green beans (from Trader Joe's)
  • 4 cups of water
  • 2 tbs Organic Chicken BTB
  • 1 tsp salt
  • Vegeta (optional)
  • 6 cloves garlic
  • Butter


Boil 4-5 min



Mix BTB in water. Bring to a boil.






Add green beans.


Add garlic. Bring to a boil. Boil for 4-5 min.
Drain.
Add a piece of butter.
Enjoy with your favorite meal:)

Chive and Ricotta Gnocchi Recipe


CookingAddic These ricotta gnocchi could not be simpler to make. A few ingredients with some seasonings and you're ready to cook. It can be served with your favorite pasta sauce or Creamy Tomato Basil  Sauce . You can served em in a bowl with sautéed mushrooms. This is new recipe for my family, and  it was a HIT!


   Ingredients: 
2 cups whole milk Ricotta (Recipe)
2 eggs
3/4 cup grated Parmesan
3/4 cup flour
1/2 cup chives
1 tbsp dill
Salt, pepper, coriander, bay leaf (vegeta, optional)

Melted butter to pour over gnocchi. (optional)



The best sauce is from Trader Joe's.
Mix all ingredients with the spoon. Boil water add salt and bay leaf.
Use 2 tsp to shape gnocchi into oval shape. Drop in to simmering water.
Cook for 4-5 min or until gnocchi start to float. Remove gnocchi, place on the plate.
You can make em crispy by sauteing in butter. Serve with the tomato sauce.

Delicious Cucumber Subs


CookingAddic These cucumber subs are awesome low carb food. It's made with cream cheese spread.  My sister has a big vegetable garden. Everyday we get a lot of fresh cucumbers. So, we had an idea to make these delicious subs. We all loved em so much. Now these are a big hit with our family's.


    Ingredients:

  • Cucumbers
  • Turkey deli meat
  • Bacon (optional)
  • Cheese (optional)


    Cream cheese spread:


  • 1 oz softened cream cheese
  • 1 oz mayonnaise
  • Minced Garlic to taste
  • Fresh dill (or herbs of your choice) 
  • Salt or vegeta seasoning 


Mix together cream cheese,  mayo, garlic, dill and salt. Set aside.
Cut a cucumber down the middle then cut in half. 
Scoop or cut out seeds in the middle. 
Spread a thick layer of cream cheese inside. Add a turkey deli meat on top. Or you can get creative and add bacon cheese etc.
Enjoy!!!


Buckwheat Pancakes {Гречаники} (Grechaniki or Hrechanyky)


CookingAddic Hrechanyky - are a traditional dish of Ukrainian cuisine. Personally, I love em for the following advantages: delicious, fast, a lot. Well, if you have leftover boiled buckwheat and the family don't want to eat it anymore, so these would be perfect to make. You can make it into a vegetarian pancakes just increase mushrooms and it will be a vegetarian dish! I got this recipe from my aunt Sveta:)



Ingredients:


  • 2 cups of cooked buckwheat
  • 16 oz mushrooms
  • 1 lb chicken liver or cooked meat then ground 
  • 1 large onion
  • 2 eggs
  • 4 tbs flour
  • Salt, pepper, coriander and Vegeta (optional)
  • Oil to saute



 Cook buckwheat from Russian store for around 15 min.







Cut onion and saute until golden brown.


Slice mushrooms and saute until ready. 
Rinse than boil liver for 5 min. 
 Rinse again.
Than transfer it to a food possessor. Mix it well.   
 Add all the rest of the ingredients and mix well.


Roll a pancake into a flour or bread crumbs. 
Cook in oil on med until ready. 
 Enjoy with your favorite salad!
