Mango Salsa

CookingAddic This sweet, chunky salsa makes a great appetizer or chicken garnish. Mangoes are a colorful, flavorful, and juicy addition to salsa. An interesting contrast in flavors occurs when mango is mixed with lime juice. This is the best time of the year to make your own salsa.


  • 1 mango - peeled and chopped
  • 1/4 cup finely chopped red bell pepper
  • 1/2 sweet onion, chopped
  • 2 tablespoons chopped cilantro or green onion
  • 2 tsp lime juice
  • 2 tsp lemon juice
  • 1 fresh jalapeno chili pepper or a dash of cayenne pepper
  • Salt to taste

Peel mangoes and dice em.

Cut all ingredients into cubes. Mix with salt, lime and lemon juice.
I skipped on the chili peppers. Just added a few dashes of cayenne pepper. It makes about 2 servings or 1 large one:) Enjoy with your favorite chips :-) 

Creamy Avocado Dressing

CookingAddic This simple and easy salad dressing recipe is a creamy mixture of avocado and buttermilk with herbs. It became my favorite salad dressing. It's simply delicious!


  • 1 medium avocado
  • 1/4 cup fresh cilantro
  • 1/2 lime, juice
  • 2 cloves garlic
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise 
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander  
  • Salt and pepper to taste
  • 1 small jalapeno (optional)
  • 1 small piece of ginger (optional)

Recipe adapted from Closet cooking with some changes.

 Get all the ingredients out.
Cut jalapeno in pieces. Discard the seeds (if you like spicy leave some seeds in). If you are not a cilanro fan use parsley.
Add all ingredients in the blender. 
 Blend for a minute.
Enjoy with your favorite salad!!!

Kale Salad with Orange Tahini Dressing

CookingAddic The kale and apples provide a balance of sweet, tart, and bitter flavors, while a simple tahini  dressing keeps it light and nutritious. This was a good experiment with orange tahini dressing  drizzled over finely chopped kale. Simply delicious salad.


  • 4 tablespoons fresh squeezed orange juice
  • 2 tablespoons tahini
  • 2 tablespoons apple juice
  • 1 teaspoon Balsamic vinegar
  • 1 tablespoon olive oil or grape seed oil
  • 1 teaspoon orange zest
  • sea salt & pepper to taste

Salad ingredients:

  • 4-5 cups chopped Kale
  • 1/2 apple
  • 1/2 orange
  • Handfull of walnuts

 Mix all dressing ingredients together.
 Makes 4 oz of dressing. This dressing goes well with romaine lettuce.
Cut apple and orange in cubes. Slice kale. 
 Pour dressing in the kale and scrunch it with your hands.
 Add the rest of ingredients, mix and enjoy immediately. 

Tomato Basil Couscous Salad

CookingAddic This salad is simple and delicious. Couscous is a whole grain which is very simple to prepare and is a perfect substitute for white rice, stews and casseroles. When I visited my aunt this year, she made this couscous salad for us, and we loved it. It's perfect for holiday dinner!!!


  • 1.5 cup uncooked cous cous 
  • 1.5 cup water
  • 1 tbsp chicken BTB (optional)
  • 1 med sweet onion
  • 1/2 juiced lemon 
  • 1 lb cherry tomatoes 
  • Fresh basil 
  • Salt, pepper
  • Oil    (I used sunflower oil from Trader Joe's)

Dice onion, add salt and squeeze the lemon on top. Mix it well and let it marinade for 30 min.  
Boil water add BTB. 
Add cous cous, cover and let it sit for 5 min. Fluff it with the fork and let it cool.  
Cut the tomatoes in half lengthwise. Mix all the ingredients together.  

Smoked Chicken Layered Salad

CookingAddic This is a Russian delicious salad. It's perfect to serve for upcoming holidays.


  • 1 cup diced Smoked chicken
  • 3/4 cup diced cucumber
  • 3/4 cup marinated mushrooms
  • 1 small sweet onion (diced)
  • 4 large boiled eggs
  • Mayonnaise
  • Salt and pepper to taste
  • Green onion

Cut onion, smoked chicken and cucumber into small pieces.
The best mushrooms are for this salad is marinated Nameko.
Cut mushrooms in to smaller pieces.
Boil eggs. Cool em, then grate it. You can mix eggs with mayo. You can make a layered salad with mayo in the layers at this point or mix it all together add salt. Garnish with green onion.  

"Christmas Garnet Wreaths Salad" {Салат Гранатовый браслет}

CookingAddic "Garnet Wreaths Salad" - a very delicious salad, one might even say - spectacular. It could be  decorated for any holiday ~ especially for Christmas. Pomegranate seeds add color and, of course, a yummy taste.


  • 3-4 Beets
  • 1 med Onion
  • 3-4 Potatoes
  • 2 large Carrots
  • 4 Eggs
  • 1.5 cup diced cooked Chicken
  • 1 Pomegranate
  • 1/2 cup Walnuts
  • 3/4 cup  Mayonnaise
  • Salt, pepper


Boil (or bake) Beets, carrots, potatoes and eggs. 

Boil chicken and cut into cubes.
Cut onion in to small cubes and marinade in (1 cup water, 2 tbsp sugar, 4 tbsp vinegar, 1/2 tsp salt) .

 Layers are: 
(don't forget to salt layers too)

1) potatoes - mayonnaise;
2) half - beets, mayonnaise;
3) carrots, mayonnaise;
4) walnuts;
5) half chicken, mayonnaise;
6) pickled onions;
7) egg, mayonnaise;
8)Last half chicken, mayonnaise;
9 ) Last half - beets, mayonnaise.
Remove the glass and add mayonnaise all around.
Decorate with pomegranate seeds.

I like to saute the chicken in butter for a few min. And add coriander, black pepper and vegeta seasoning. This step makes it more tasty :).
The easy way to get pomegranate seeds out is to cut it's skin in 4 and then tap with something. It comes out really easy.

Peel and grate potatoes, carrots, beets and eggs. Chop nuts. Use a ziplock bag to add mayo the salad layers.

Put a glass in the middle of the 12 in plate so, the salad will look like a wreath.
