THAI LEMONGRASS SOUP

This Thai lemongrass soup is refreshing and healthy, but what’s great is that it’s also hot and comforting, and if you choose, spicy as well. I will probably make this again in the summer just to test out my theory. Okay, I’ll probably make this again next week.

It was really enjoyable, even on a rainy December evening, and it only took 20 minutes to throw together. So, I kinda have to make it again, you know, when I’m over Christmas cookies and all. I love it when my New Year’s resolutions pretty much take care of themselves like that.


Ingredients

  • 2 lemongrass stalks
  • 1 tbsp. vegetable oil, divided
  • 2 garlic cloves, minced
  • 1 tsp. fresh grated ginger
  • 4 cups vegetable broth
  • 1 tsp. Asian chili paste (or to taste)
  • 2 cups stemmed and sliced shiitake mushrooms
  • 1 cup cherry tomatoes, halved
  • 1/2 lb extra firm tofu, drained and pressed for at least 15 minutes
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp. lime juice
  • soy sauce or tamari to taste*


Instructions

  1. Bruise lemongrass stalks by pressing on them with a large knife, until they flatten a bit. Cut each into 4 sections. Set aside.
  2. Heat 2 teaspoons of oil in medium saucepan over medium heat. Add garlic and ginger. Sauté for 1 minute.
  3. Add broth, lemongrass, chili paste, shiitakes and cherry tomatoes. Bring to a low simmer and allow to cook about 12-15 minutes, until mushrooms are tender.
  4. While broth simmers, cut tofu into 1 inch cubes. Coat medium skillet with remaining 1 teaspoon of oil and place over medium-high heat.
  5. Arrange tofu cubes in a single layer. Cook about 5 minutes until lightly browned on bottoms, turn and cook another 5 minutes.
  6. Add tofu to broth mixture, along with cilantro and lime juice. Season with soy sauce to taste. Remove lemongrass and discard. Ladle into bowls and serve.

 Melt butter with cream cheese.
Whisk it until well combined. 
Slowly add milk with whipping cream while mixing. 
Add all the rest of the ingredients. Bring it to a boil cook for 2 min until  Parmesan melts. Serve hot with pasta.

Beef Chili Recipe My Way


A healthy chili that is ready in  less than an hour. This super quick and easy kidney beans chili recipe has an incredible depth of flavor. We don't eat anything spicy so this is chili my way.

Ingredients: 

  • 1 1/5 lbs ground beef
  • 4-5 med potatoes
  • 1 small onion
  • 1 large tomato
  • 1 large carrot
  • 1 cup frozen white corn (Trader Joe's is the best)
  • 1 red bell pepper
  • 1 can red kidney beans
  • 1 cup shreded mixed cheese
  • Salt, pepper, coriander, cumin, smoked paprika
  • Parsley flakes, dill, bay leaf

Heat a 1 tbsp oil in the skillet. Add ground beef and saute for 15 min.

Peel potatoes, onion, carrot. 
Add beef and beans to the sauce pan. Cover with water. Add bay leaf, salt, pepper. Bring it to a boil. Boil for 15 min.
Cut potatoes in cubes. Slice carrots.  
Add to the pot. While its cooking cut the rest of the veggies.
Use a shredder for tomato. Cut onion and bell pepper into a small cubes. 
Add corn. 
Add onion and tomato. 
Add red bell pepper. 
 Add all the spices and boil it on low heat for 35 min or until potatoes are done.
 Add cheese boil for 1 more min. Turn off the stove.
Add dill, mix.







Enjoy with sour cream!!! 




Fried Tortilla with Parmesan Mashed Potatoes


CokingAddic These are perfect meatless hand pies for kids or adults. It's an easier and less time consuming version to Pirojki. What could be better? Mashed potatoes are mixed with herbs and cheese - is a really delicious combination. Then it's fried in tortilla. Crispy and scrumptious! 

Ingredients:


  • 12 uncooked flour tortillas
  • 2 cups of Mashed Potato
  • 1 tbs minced dill
  • 2 tbs minced green onion
  • 1 med caramelized onion
  • 3/4 to 1 cup of Parmesan or cheddar cheese
  • Salt if needed
  • Black pepper to taste


Make Mashed Potato first than let it cool.

Peel 1 med onion and shop in small pieces. Saute onion until golden color (caramelized).
Mix mashed potatoes with herbs. If potatoes are too stiff add more milk to make em more soft and creamy.





Add cheese of your choice.

 Brush the ends of the tortilla with water.
 Add about 2 tbs of potato filling and spread.
 Pinch the ends with the fork.
Fry on med temp until golden color. 
Fry both sides. Use a paper towel to get rid of excess oil.

Chive and Ricotta Gnocchi Recipe


CookingAddic These ricotta gnocchi could not be simpler to make. A few ingredients with some seasonings and you're ready to cook. It can be served with your favorite pasta sauce or Creamy Tomato Basil  Sauce . You can served em in a bowl with sautéed mushrooms. This is new recipe for my family, and  it was a HIT!


   Ingredients: 
2 cups whole milk Ricotta (Recipe)
2 eggs
3/4 cup grated Parmesan
3/4 cup flour
1/2 cup chives
1 tbsp dill
Salt, pepper, coriander, bay leaf (vegeta, optional)

Melted butter to pour over gnocchi. (optional)



The best sauce is from Trader Joe's.
Mix all ingredients with the spoon. Boil water add salt and bay leaf.
Use 2 tsp to shape gnocchi into oval shape. Drop in to simmering water.
Cook for 4-5 min or until gnocchi start to float. Remove gnocchi, place on the plate.
You can make em crispy by sauteing in butter. Serve with the tomato sauce.

Chicken Gyros and Tzatziki Sauce Recipe


CookingAddic Garlicky, oregano-laced,  chicken strips are piled on a pita, sauced with a classic yogurt Tzatziki, and garnished with chopped fresh veggies. I been putting off making pitas for a long time. Finally I decided to make em and these were a hit at my house. Kids really loved it! This Tzatziki Sauce is so good, I been adding it to my salads now. These are so easy to make. If you never made gyros, this is the time to make em.



     For pitas you will need:     


  • 3 Pita breads
  • 3 leafs of  Romaine lettuce
  • 1 Tomato cubed
  • 1/2 Sweet vidalia onion, thinly sliced
  • Cilantro {optional}
  • Tzatziki sauce {recipe included}


     Chicken recipe:


  • 1 1/2 cup grilled chicken breasts strips
  • 2 tsp garlic, minced
  • 1 tsp oregano {dried}
  • 1/4 tsp ground cumin
  • 1/3 tsp ground coriander
  • 2 tsp butter for saute


     Tzatziki Sauce:


  • 1 cup cucumber, finely chopped
  • 1/2 cup greek yogurt
  • 1/3 cup sour cream
  • 2 tsp lemon juice
  • 3-4 garlic cloves, minced
  • 2 tsp fresh minced dill
  • 1/4 teaspoon salt


                             

I used Costco pita bread.
To make the sauce: Peel cucumbers and mince em.



Mix all of the ingredients together and let sit for at least 30 min to hour before using
To make chicken: Melt butter in the skillet. Add chicken and heat it up. 
Add minced garlic.
Add oregano, cumin and coriander. Saute for 2 min.
Slice onion and cube the tomatoes.
Warm up 3 pita breads. Layer with the lettuce, chicken, tomato, red onion and tzatziki sauce.
Wrap it in foil or a paper towel.
