Cream Cheese Alfredo Sauce

CookingAddic A creamy Alfredo sauce is probably the quickest and easiest pasta sauce to make. Made simply and incredible over so many dishes. Just a very simple sauce with few ingredients. My family loves this sauce. 


Ingredients: 


  • 1/2 stick of butter (50 grams)
  • 8 oz cream cheese
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 3-4 oz grated Parmesan
  • 5 cloves garlic
  • 1 tbsp  parsley flakes
  • Black pepper
  • Salt to taste



 Melt butter with cream cheese.
Whisk it until well combined. 
Slowly add milk with whipping cream while mixing. 
Add all the rest of the ingredients. Bring it to a boil cook for 2 min until  Parmesan melts. Serve hot with pasta.

Beef Chili Recipe My Way


A healthy chili that is ready in  less than an hour. This super quick and easy kidney beans chili recipe has an incredible depth of flavor. We don't eat anything spicy so this is chili my way.

Ingredients: 

  • 1 1/5 lbs ground beef
  • 4-5 med potatoes
  • 1 small onion
  • 1 large tomato
  • 1 large carrot
  • 1 cup frozen white corn (Trader Joe's is the best)
  • 1 red bell pepper
  • 1 can red kidney beans
  • 1 cup shreded mixed cheese
  • Salt, pepper, coriander, cumin, smoked paprika
  • Parsley flakes, dill, bay leaf

Heat a 1 tbsp oil in the skillet. Add ground beef and saute for 15 min.

Peel potatoes, onion, carrot. 
Add beef and beans to the sauce pan. Cover with water. Add bay leaf, salt, pepper. Bring it to a boil. Boil for 15 min.
Cut potatoes in cubes. Slice carrots.  
Add to the pot. While its cooking cut the rest of the veggies.
Use a shredder for tomato. Cut onion and bell pepper into a small cubes. 
Add corn. 
Add onion and tomato. 
Add red bell pepper. 
 Add all the spices and boil it on low heat for 35 min or until potatoes are done.
 Add cheese boil for 1 more min. Turn off the stove.
Add dill, mix.







Enjoy with sour cream!!! 




Cedar-Planked Salmon Recipe


CookingAddic First time I tried this salmon recipe, I was amazed how delicious it is. Cedar plank salmon is a classic recipe for the grill. You get all the flavor of the grill with real smoke even if you are using a gas grill with the convenience of cooking a large, delicate fish fillet on a cedar plank. 

This grilled salmon recipe is definitely going to please. One trick is to keep the salmon fillet on the cedar plank the whole time, from the preparation to serving. If you place the cedar plank on a sheet of foil you and put the whole thing on the table. My brother in law made it for the party. So I had to get the recipe to share with you guys


      Ingredients:


  • 1 piece salmon filet 
  • 2 tsp salmon rub
  • 1/3 tsp salt 
  • 1/3 tsp coriander
  • 2-3 tbs olive oil
  • 1 large lemon (1/3 of the lemon juiced)
  • 1 cedar wood plank




I found cedar boards at Central Market and Fred Meyer. 


Rinse the plank with water to remove any dust.
Fill a sink or other large container with water.
Submerge the plank in the water, placing a weight on top of it. Soak the plank for 4 to 24 hours. One of my readers said she always soaks the planks for 24 hrs and it never catches fire. :-)
Rinse salmon and pat it dry. Squeeze the lemon juice on top of salmon. Slice the rest of the lemon for the top.
Sprinkle with salmon rub. 
Rub it in with your hands. Sprinkle salt and coriander. 
Pour olive oil and spread it on top. Let it soak for 1-2 hrs. 
When wood plank are ready transfer salmon to the board. Top with lemon slices.
Preheat grill for 15 min on high. Put salmon in and close the lid. Cook on high for 5 min. Then lower the temp to med-low. Cook for 17 min. If it catches fire at the end, blow it out turn off the grill. Then let salmon stay covered for the rest of time. I figured out that cook time is 20-25 min is perfect.

"Ronzoni Stuffed with Shrimps"


CookingAddic This is a big hit in my house and you really only need to add a salad and you have a satisfying dinner. These Ronzoni can be served with Creamy tomato basil pasta sauce (from Trader Joe's) or Alfredo Sauce.


Ingredients:


  • 4 cups whole milk Ricotta (Recipe)
  • 1 lb salad shrimps
  • 1 cup crab meat (optional)
  • 1/2 cup minced chives
  • 2 eggs
  • 2-4 tbs whipping cream (optional)
  • 2/3 cup of  shredded Parmesan cheese
  • 3/4 cup shredded mixed cheese
  • Salt, pepper, coriander and vegeta seasoning (optional)
  • Butter for shrimps
  • 1 box of Ronzoni


Preheat oven to 350F.

Cook ronzoni according to the package directions.











Melt a piece of butter and cook shrimps for a few min.


Mince chives mix with ricotta add parmesan. 
Add mixed cheese and shrimps. 
Add whipping cream  if your ricotta (tvorog) is dry. Otherwise you can skip the whipping cream.
Mince crabs add to the mix. 
Add eggs, salt and spices. Mix well.
Stuff cooked ronzoni. Add your favorite pasta sauce. Bake covered for 40- 50  min.






I really love it with Creamy tomato basil sauce from Trader Joe's.  
My husband loved it with Alfredo Sauce.  Sprinkle some Parmesan on top.

"Mushroom Asiago Chicken Recipe"



CookingAddic This is a quick, easy, and elegant recipe that is suitable for entertaining. Just in time for holidays. It's a scrumptious Chicken Mushroom recipe from The Midnight Baker. It was featured on Zip List as top recipes of 2013. So, we test it and my family gave it a thumbs up! 



Ingredients: (I tweaked the recipe a little bit)



  • 1 lb boneless skinless chicken thigh or breast 
  • 2 cups portobello mushrooms
  • 5 cloves garlic, minced
  • 3 springs fresh thyme
  • 1 1/2 cups dry white wine
  • 1/2 cup flour
  • 3/4 cup heavy cream
  • 1/2 cup shredded asiago cheese
  • 1/2 cup Parmesan cheese
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)
  • 2 tbsp butter
  • Oil






Cut chicken in to med slices. 
 Heat the butter with 1 tbs of olive oil in deep, heavy skillet or saute pan over medium heat. Dredge chicken in salt, pepper and flour.  
Add it to the skillet.  Saute until golden on each side, about 5 minutes per side.  Remove from pan. 
Slice mushrooms in half. Saute with 1 clove of garlic until golden color.  
Mix mushrooms and chicken together. Add white wine and thyme. 
 Bring to a boil, then reduce heat, cover and simmer for 20 minutes. Then pour the liquid out.
Add asiago and parmesan  cheese and heavy whipping cream. 
Cook, stirring constantly over low heat until cheese melts. Taste if it needs more salt.
May be served over  pasta or rice.
