"Asiago Potato Gnocchi"

CookingAddic Traditional homemade gnocchi (little Italian dumplings) are made with just potato, flour, egg and salt. Well, it was not enough flavor for me; so I added more herbs and cheese to it. I really love how these turned out. :) We really enjoyed Ricotta Gnocchi when I made em. These are like lazy potato Vareniki.


  • 9 med potatoes (cooked)
  • 3 large eggs
  • 3 cups flour
  • 1 cup Monterrey jack cheese
  • 1 cup asiago or pamesan cheese
  • 1 tbs dry dill
  • 1 tsp coriander
  • 2 tsp garlic spread seasoning
  • 1 tsp salt

First bake potatoes covered with foil. It will take about an hour. Let em cool.

Turn on water for cooking gnocchi.
 Mix eggs with salt and herbs.
Grate potatoes and cheese on the table. 
Mix in eggs. 
Add flour. 
 Kneed the dough just to combine all ingredients together. 
Take a piece of the dough and roll it into the line. Then slice it and roll each piece on the fork. 
Transfer to a boiling water. Add salt and bay leaf to the water. 
Boil for a few min until they float up. 
Add butter. You can serve em with your favorite sauce. These would taste even better with caramelized onions.
We like to fry em in butter.
