Ingredients:

  • 250 g (1 cup) white chocolate, finely chopped 
  • 1 can Coconut cream
  • 2 egg whites
  • 1 tsp lemon juice


   Strawberry sauce:

  • 3/4 cup  fresh strawberries
  • 1 tsp organic sugar (optional)

This recipe was adapted from Angie's Recipes. 

 Refrigerate coconut cream for a few hours or overnight. 
 Take out solid coconut cream and , discard the liquid on the bottom of the can. Whip the coconut cream until it has the airy texture of whipped cream, about 5 minutes. Place in the fridge covered. 
Melt the white chocolate. 
Whip egg whites with lemon juice until thick an fluffy. 
Carefully  fold white chocolate in egg whites.
Then fold it in with coconut. Transfer it to dessert cups. Place in the refrigerator.
 Blend strawberries in the blender. Pour a layer  of strawberry on the mousse.

"Peach Galettes with Cream Cheese Filling"



CookingAddic Summer is almost over but there's still time to enjoy delicious peaches.  There's just something so incredibly intoxicating about the scent of a ripe peach.  These beautiful Peach Galettes made with pastry puff crust that is topped with a layer of creme cheese and slices of fresh peaches on top. 


     Ingredients:

  • 1 pack (8 oz) cream cheese (room temp)
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla extract


 You will need 1/4 of Pastry Puff Recipe


  • 2 fresh peaches
  • 1 egg to brush on top
  • Flour for the table
  • Sugar for sprinkle on top 


Prehet oven to 425F

Make Pastry Puff Dough . Keep it refrigerated.
Slice peaches thinly. 
Mix sugar with cream cheese. 
Add vanilla. 
 Add egg, mix with the fork.
 Fluff 1 egg in separate the bowl, set aside.
Take out dough from the fridge. Roll a big piece on floured table. Cut a med-small circle with any dessert plate.
 Transfer the circles to baking sheet covered with parchment paper. Add 2 tbs of cream cheese filling.
Arrange a few pieces of peaches on top. Bend the edges up.  
Brush the edges with egg. 
Sprinkle with a little bit of sugar. I will make about 8 galettes.  







Bake for 15-20 min.











Cream Cheese Alfredo Sauce

CookingAddic A creamy Alfredo sauce is probably the quickest and easiest pasta sauce to make. Made simply and incredible over so many dishes. Just a very simple sauce with few ingredients. My family loves this sauce. 


Ingredients: 


  • 1/2 stick of butter (50 grams)
  • 8 oz cream cheese
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 3-4 oz grated Parmesan
  • 5 cloves garlic
  • 1 tbsp  parsley flakes
  • Black pepper
  • Salt to taste



 Melt butter with cream cheese.
Whisk it until well combined. 
Slowly add milk with whipping cream while mixing. 
Add all the rest of the ingredients. Bring it to a boil cook for 2 min until  Parmesan melts. Serve hot with pasta.

Beef Chili Recipe My Way


A healthy chili that is ready in  less than an hour. This super quick and easy kidney beans chili recipe has an incredible depth of flavor. We don't eat anything spicy so this is chili my way.

Ingredients: 

  • 1 1/5 lbs ground beef
  • 4-5 med potatoes
  • 1 small onion
  • 1 large tomato
  • 1 large carrot
  • 1 cup frozen white corn (Trader Joe's is the best)
  • 1 red bell pepper
  • 1 can red kidney beans
  • 1 cup shreded mixed cheese
  • Salt, pepper, coriander, cumin, smoked paprika
  • Parsley flakes, dill, bay leaf

Heat a 1 tbsp oil in the skillet. Add ground beef and saute for 15 min.

Peel potatoes, onion, carrot. 
Add beef and beans to the sauce pan. Cover with water. Add bay leaf, salt, pepper. Bring it to a boil. Boil for 15 min.
Cut potatoes in cubes. Slice carrots.  
Add to the pot. While its cooking cut the rest of the veggies.
Use a shredder for tomato. Cut onion and bell pepper into a small cubes. 
Add corn. 
Add onion and tomato. 
Add red bell pepper. 
 Add all the spices and boil it on low heat for 35 min or until potatoes are done.
 Add cheese boil for 1 more min. Turn off the stove.
Add dill, mix.







Enjoy with sour cream!!! 




Chocolate Eclair Cake Recipe


CookingAddic One of our favorite desserts is Chocolate Eclair Cake. It definitely falls under the quick and easy category.  Home made Chocolate Eclair Cake is so Easy to make with these step-by-step pictures. I like to make it with real custard pudding and real whipping cream  with vanilla bean. It's perfect dessert for parties.



   Ingredients for eclair: 


  • 1 cup water
  • 1 stick butter
  • 1 cup flour
  • 4 large eggs


  Ingredients for custard cream:


  • 3  cups milk
  • 3 1/2 tbs corn starch
  • 1 1/2 cups of sugar
  • 4 eggs
  • 1 tbs vanilla  bean paste or vanilla extract
  • 1 pack (8 oz) cream cheese room temp
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 2-3 oz Chocolate, melted mixed with 1 tbsp whipping cream.


Preheat oven to 375F.

In the pot add water and butter. Bring it to a boil. 
Add flour while mixing. Remove from the heat.
Mix well until it becomes one piece.  Let it cool for about 30 min.








Custard Cream:
Whip eggs until fluffy. Add sugar to the next step. Meanwhile start next step.
Mix sugar and corn starch in the cooking pot.

Add milk. Bring it almost to a boil. Move it aside from the burner. 

Add vanilla bean paste to the eggs. 
Next take a cup of hot milk, mix in the eggs while stirring it. And add another cup again.


Then pour slowly the egg mixture into the hot milk while stirring it. Return the mixture to the burner and heat on med-high until it becomes thicker. Just before it starts to boil. Cool it down completely.



Back to the batter:


Now the batter is cooled down add egg one at the time while stirring it.
Spread oil into balking dish. 
Spread batter in 12 inch circle baking pan or glass 9x12 inch. Make the ends up. 
 Bake for 30-40 minutes or until golden brown. You may want to check it occasionally-you don't want to overcook the crust, it will ruin the cake! Remove from oven and let cool (don't touch or push bubbles down).
 Whip heavy whipping cream with powdered sugar until it's stiff.
You can spread it on top of custard cream or just mixed it all up together.
Whip cream cheese until fluffy then add cold custard cream and fold in whipping cream by hand or spread it on top.  
Pour in to the eclair cake. 
Melt about 2-3 oz of dark chocolate add 1 tbsp whipping cream and pour it on top.  
Make swirls with a knife. Refrigerate for a few hrs.
